Heavenly Pumpkin Pie Bars

1 pkg. Yellow Cake Mix
1/2 cup Butter, melted
3 Eggs
1 lg. (29 oz.) can Pumpkin Pie Filling
2/3 cup canned Evaporated Milk
1/4 cup Sugar
1 teaspoon Cinnamon
1/4 cup Butter

Preheat oven to 350 degrees. Grease the bottom of a 9X13 pan. Pour 1 cup of the yellow cake mix into a medium bowl; set aside. Combine remaining cake mix, 1/2 cup of melted butter and 1 egg; mix well. Press into prepared pan. Combine pumpkin pie filling, remaining 2 eggs, and evaporated milk in a medium mixing bowl; mix until smooth. Pour evenly over the crust in the 9X13 pan. Pour the cinnamon and sugar into the mixing bowl containing the 1 cup of cake mix. Cut in the 1/4 butter till the mixture looks crumbly. Sprinkle this mixture over the pumpkin filling. Bake for 45 to 50 minutes or until a knife inserted into bars comes out clean. Serve warm or cooled with a dollop of whipped cream. (Sorry no pictures for this one.)

Fall/ Halloween Decorations

I don't like Halloween. I just am not into all the scary things that go along with Halloween. It is probably my least favorite holiday. However, I love Fall decorations. (Weird, I know!) Here are a few things (from Pottery Barn) that I found for Halloween and Fall.

Warm Chocolate Melting Cake

This is the recipe for the chocolate cake that they serve on the Carnival Cruise Ship.
8 oz. Semisweet Chocolate
2 sticks, Butter
7 Eggs
6 tbsp. Sugar
1/2 c. Flour

Preheat oven to 375 degrees. Melt chocolate and butter and cool for 10 minutes. In a separate bowl mix 4 eggs with sugar. Whisk together. Add flour and whisk together. Add remaining 3 eggs, and whisk together. Add egg mixture to the chocolate mixture. Coat each ramekin with butter to keep the cak from sticking. Pour the entire mixture into individual ramekins. Fill the ramekins about 2/3 full. The cake will expand a little. (If you don't want to use all of the batter, then store it in a tupperware container in the refrigerator.) Place the cakes on a baking sheet and bake for about 15 to 20, depending on the size. Cakes should come out dark and a little glossy in the center, but the outer rim should be cooked through. Top each cake off with a little powder sugar and serve with vanilla ice cream. Serve the cake right out of the oven.

Empanada's Recipe

1 package La Saltena dough (see below for packaging and store address)
2 Hard Boiled Eggs, chopped
Green Olives, chopped
1 lbs. Ground Beef
1/2 Onion, copped
Salt
Pepper
Paprika

Cook ground beef and onion. Season with salt, pepper and paprika (however much you want). Place meat in a bowl and cool off in the refrigerator (you can make this the day before). Chop the eggs and green olives and place them in seperate bowls.

Gently wet the edges of the empanada dough and fill the dough with meat, olives and egg. Fold the dough in half and pinch the ends closed. Twist the edges a little to ensure that the dough is completely closed. Evenly space them on a baking sheet. Bake at 375 degrees for 20 to 25 minutes or until lightly golden brown. Serve them hot!

Homemade Salsa

1/2 Jalapeno (mild/ medium), remove seeds
6 medium Red Ripe Vine Tomatoes
1/2 Red Onion
4 tbsp. Fresh Cilantro, chopped
1/2 Lemon, juiced
1 tsp. Salt

Dice everything and mix together. Use all of the juices from the tomatoes. Add salt and lemon juice and mix thoroughly.

Barefoot Contessa Family Style
Serves: 3
Level: Easy

Ingredients
-Vegetable Oil
-Kosher Salt
-3/4 lbs. Linguine
-3 tbs. Butter (unsalted)
-2 1/2 tbs. Olive Oil
-1 1/2 tbs. Garlic (minced, about 4 cloves)
-1 lb. Large Shrimp (peeled and deveined)
-1/4 tsp. Fresh Ground Pepper
-1/3 c. Fresh Parsley Leaves (chopped)
-1/2 Lemon (zest grated)
-1/4 c. Freshly Squeezed Lemon Juice
-1/4 Lemon (thinly sliced in half-rounds)
-1/8 tsp. Hot Red Pepper Flakes

Directions
Drizzle some oil in a large pot of boiling water salted, add 1 tablespoon of salt and the linguine, and cook for 7 to 10 minutes, or according to the directions of the package.

Meanwhile, in another large (12-inch), heavy-bottomed pan, melt the butter and olive oil over medium-low heat. Add the garlic. Saute for 1 minute. Be careful, the garlic burns easily! Add the shrimp, 1 1/2 teaspoons of salt, and the pepper and saute until the shrimp have just turned pink, about 5 minutes, stirring often. Remove from the heat, add the parsley, lemon zest, lemon juice, lemon slices, and red pepper flakes. Toss to combine.

When the pasta is done, drain the cooked linguine and then put it back in the pot. Immediately add the shrimp and sauce, toss well, and serve.

Cinnamon Twists w/ Cardamom-Honey Dipping Sauce

Cinnamon Twist Ingredients
1tbs. Ground Cinnamon
1 tbs. Sesame Seeds
1/2 tsp. Ground Cardamom
2 tbs. Light Brown Sugar
1 (9x10") Sheet Frozen Puff Pastry
1 Egg, beaten

Directions:
Thaw out the puff pastry and cut into 20 long pieces. Place an oven rack in the center of the oven. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper. Set aside.

In a shallow bowl, mix together the cinnamon, sesame seeds, cardamom, and brown sugar. Twist 2 pieces of dough together to form a rope-shape. Pinch the ends together to seal. Brush the dough with the beaten egg and roll gently in the cinnamon mixture until coated. Place on the prepared baking sheet. Repeat with the remaining dough. Bake for 12 to 14 minutes until puffed and golden. Cool on a wire rack.

Cardamom-Honey Dipping Sauce Ingredients
1/2 cup Honey
1/4 cup Lemon Juice
1/3 cup Powdered Sugar
1/2 tsp. Ground Cinnamon
1/2 tsp. Ground Cardamom

Directions:
In a small bowl, whisk together the honey, lemon juice, powdered sugar, cinnamon and cardamom until smooth. Pour into a small dipping bowl.

"My Sisters Keeper"

I recently finished this book. I am having a hard time figuring out what to say about it. I enjoyed it, but I wouldnt say that it was my favorite book. The story is about a girl named Anna who was concieved to be a donor for her sister Kate, who has a rare form of leukemia. Anna has decided that she has had enough when she is expected to donate a kidney to her sister, and files for medical emancipation. This book made me think of what I would do as a parent if I was put in the same situation. I haven't seen the movie yet, but that is next on my list of movies to watch. I am now trying to figure out my next series of books, hopefully ones that aren't as sad.

Blue-Cornmeal Griddle Cakes


1 1/4 cups ground blue cornmeal
3/4 cup all-purpose flour
1 tbsp baking powder
1/2 tsp salt
1 cup skim milk
1/3 cup honey
2 tbsp canola oil
2 eggs, lightly beaten
1 cup fresh or frozen blueberries
(or 1/4 cup dried)
Vegetable-oil cooking spray
Chili powder (optional)



Combine first 4 ingredients in a large bowl. Whisk together milk, 1/3 cup honey, oil and eggs in a seperate bowl and add to dry ingredients. Fold in blueberries. Heat nonstick skilletover medium heat. Coat lightly with cooking spray and dollop 1/4 cup batter for each cake. Warm remaining honey in a saucepan and add a dash of chili powder to taste, if desired. Drizzle over cakes.

I was at Nordstrom's yesterday trying to find a new pair of black flats. I have a hard time finding shoes because most of the cute shoes are so uncomfortable. Until I found these....
